As a kid, whenever I had lasagna, I felt like I had just come home! There is just something about that ooey-gooey mozzarella with the golden crisp that makes you feel like all is well in the world! And since I went into eating the Keto Lifestyle… I never thought of a keto lasagna. But here it is. This recipe is very easy to prepare. So if you have your family over for this coming Sunday, it is just simple steps to having a glorifying taste, an incredible aroma that fills your home and the glorious feeling of satisfaction! You can even put it all together the day before and pop it into the oven 30-minutes before your friends and family come over.
Or invite your friends to help you in the kitchen. Here I am cooking with my dear friend and business partner Tim DeLong. There is nothing better than to cook, listen to good music, tell great stories as you prepare something that your FRAMILY will take total delight in!
As you can see, my FRAMILY loved this meal!
So here is what you will need:
16 oz ground beef
6 oz can of tomato paste
14.5 oz of diced tomatoes
1 1/2 large zucchinis, thinly sliced lengthwise
10 oz ricotta cheese
4 oz mozzarella cheese shredded or more for extra cheesy
Preheat oven to 350 degrees F.
Peel zucchini into strips and leave out the seedy core. Salt and roll them up in a dish towel to get rid of excess moisture. Leave for about 20 minutes
Brown ground beef in a pan and add the tomato paste and diced tomatoes. Season well with salt and pepper.
Layer into a small casserole dish: meat, zucchini, ricotta, meat, zucchini, ricotta, mozzarella.
Cover with foil and bake for 30 minutes. Broil uncovered for 2-3 minutes to brown the top.
